On June 25, 2022 Alexis had a seizure while on a Girl Scout trip. That seizure turned into another, which turned into several more. Eventually Alexis was placed in a coma for 3 months until the seizures slowed down- due to brain damage from being sedated so long, she will always have seizures, and struggles physically and mentally. Since waking up, she has been at Inpatient Rehabilitation facilities at Mayo and Avera. She will continue outpatient therapy in Brookings SD. Amber, Jason and her will live in an apartment in Brookings while trying to figure out life. Thank you so much for your consideration and help in making home life a little easier! Alexis follows a Low glycemic diet, which is proven to reduce seizures by 40%. She can have 60 total carbs per day, or on average 20 per meal. We count total carbs, not net. If you could let me know the carb count per serving of your dish, that would be awesome! Here are some aspects of her diet - but the Charlie foundation (https://charliefoundation.org/keto-recipes/) is a good place to start for recipes, however we've kept things basic in the hospital (extra meat, low carb veggie, very limited fruit) so we are really open to whatever- We are definitely open to new things! -High fat -No or minimal gluten (for seizure risk) -Swerve, monkfruit and Stevia for sweeteners versus splenda -watch for hidden carbs in seasonings and sauces (hidden valley ranch is her fav and has less carbs for example) -most things labeled "keto" are not keto. Or have a generic alternative that is healthier and has less carbs -Use pork rinds or almond flour in place of flour -Cheese and meat are pretty endless (sandwich meat has carbs and too much cheese causes constipation) -We have tortillas we use for tacos (Mr tortilla brand, which I found on Amazon) or just have taco salads. -Egg wraps (hyvee) or Egg crepinis (walmart) are also good options for wraps, tacos, lasagnas and enchiladas -Cali-flour pizza crusts (at Walmart) if making pizza are good and within her carb limit -Gravy can be made low carb, with broth (or meat drippings) and cream cheese (Philadelphia brand) or broth and xanthan gum. -I've heard radishes or rutabagas are good alternatives for potatoes but haven't tried it yet. Here are some suggestions of things we've had in the hospital, or brought in for her when we can. We are really open to whatever; just trying to give suggestions for her diet :) -Chicken strips/nuggets with almond flour or pork rinds for breading -Tacos -Cheeseburgers, no buns -Meatloaf, no breading or ketchup on top. (We've been using gravy). -Cauliflower in place of potatoes -Pizza with cali-flour crust -alfredo, spaghetti and mac & cheese with veggie noodles (heart of palm, spaghetti squash, or zucchini noodles are the best for noodles.. dry veggie noodles are usually too high of carbs) -stir fry -tator tot hotdish - use cheese soup versus cream of mushroom, and limited tator tots (3 tots are 9 carbs for example) or cauliflower tator tots (still need limits but not strict) -green beans, carrots, tomatoes, cucumbers, lettuce (garden salads), zucchini, are her fav veggies. She loves corn & peas but they are higher carbs, so it needs to be in a mixed veggie to get them in. She's not a fan of asparagus or brussel sprouts -She likes ground beef, bacon more than sausage, sirloin, and chicken. Okay with pork and Turkey. She doesn't like fish. -keto fat bombs for a treat, but we usually don't worry about desserts or cookies..no carbs to spare!
