Fordham Food Train: Ruth & Gregg

Story

Ruth & Gregg have spent their lives helping others. It’s time to help them. Ruth has spent quite a bit of time in the hospital lately and is not yet up to cooking and food prep. She needs a renal diet. I have listed components of a renal diet below. Anything is helpful, and I know the restrictions can be daunting. Ruth & Gregg aren’t picky, so let’s keep Ruth healthy.


Special Notes

Renal diet: Key Components of a Renal Diet: * Protein: Limited to prevent excessive workload on the kidneys. * Sodium: Restricted to reduce fluid retention and blood pressure. * Potassium: Limited to avoid electrolyte imbalances. * Phosphorus: Restricted to prevent bone problems and kidney damage. * Fluids: May be restricted depending on kidney function. 
 Recommended Foods: * Fruits and vegetables: Low-sodium options like berries, apples, cauliflower, and eggplant * Lean proteins: Chicken, fish, tofu * Whole grains: Brown rice, quinoa, oatmeal * Healthy fats: Olive oil, nuts, seeds 
 Foods to Avoid:  * Processed foods: High in sodium, potassium, and phosphorus * Red meat: High in protein and phosphorus * Dairy products: High in potassium and phosphorus * Bananas, potatoes, and avocados: High in potassium * Sugary drinks: High in sodium and fluids
