Hello friends and family! As you all know, my health has been a major challenge for me for many years now. I’ve been terminally ill since 2016 and have picked up quite a few new diagnoses along the way to the current day. While most of my conditions are well managed by my various teams of doctors and strict regimen of medications, one of my long standing conditions has presented the need for surgical intervention. I have carpal tunnel and trigger finger in both hands but I will be starting with surgery on the right hand (my dominant hand) on February 14th. Happy Valentines to me :) Anyways, while I have my girls here at home with me and they are capable of assisting with a lot of the housework and pet care…I would like to take the burden of cooking meals off of them. Especially considering I won’t be driving for the first week after surgery and will not be able to go get groceries. While my oldest is getting close to the right age, she still has a few months to go before she can get her driving permit. Special Notes
Some diet restrictions: No shellfish, red wine/grapes/raisins, oregano, or ricotta cheese. We also avoid lactose and drink lactose free or milk substitutes like almond and oat milk. Cheese is okay! For take-out ideas: McDonald’s- we all like nuggets and fries as well as their Sweet Tea. Also like plain McDoubles/McChickens. For breakfast kids like Sausage McGriddle or Sausage Biscuits. I like the Sausage/Egg Biscuit or McMuffin with no cheese. Also like the breakfast platter. Pizza places- we like meat lover’s or pepperoni for toppings. Not picky on which pizza place it comes from. Chinese- we like sweet/sour chicken, pork fried rice, wonton soup/fried wontons, and also Four Seasons but with no shrimp. Again, not picky on where it comes from as long as you think they do a good job with their food. Indian- Mild Chicken Vindaloo or Butter Chicken with Basmati rice and plain Naan bread. American/Cafe food- chicken fingers and fries are always appreciated. Kids like breakfast foods for dinner, especially pancakes with fruit toppings and bacon. Also like most pasta dishes like spaghetti with meat sauce or a baked Ziti/lasagna (but no ricotta, it’s a texture adversion). For fish, we love baked Salmon, fried and breaded Pollock/Cod/Barramundi/Walleye/most types of fish. White long grain, Basmati, or Jasmine rice ALWAYS welcome as a side.
