Kensley broke her arm and had surgery a few weeks ago and will be non-weight-bearing on that arm for the next three months. Matthew tore his ACL and will have surgery on 21st March. They are going to need some help during these next few months with food and other household help. In terms of food, Matthew is strictly vegetarian and not picky at all (no food allergies). Kensley is pescatarian (celiac/gluten free and soy allergy). Her celiac means no cross contamination with butter or condiments that could have come in contact with gluten. The soy allergy is also difficult because soy is not a regulated allergen so people would have to read through all of the ingredients. So, for example, cooking things in vegetable oil doesn’t work because a lot of vegetable oils or fake butters have soy in them. If people only feel comfortable making food for Matt, that’s still a great help! Just make sure that things are labeled really well. If anyone is willing to also help make food for Kensley, a few recipes are attached. A lot of their current limitation is the layout of their house. They have a three-story townhome and the bedroom is on the top floor and the washer and dryer are in the basement. So, if people are wanting to help, but don’t feel comfortable dealing with the food allergies, if they want to come over and help do laundry, that’s another thing that would be a huge help over the next few weeks.
